A dry cheese with pleasant nutty tones made in 20 & 40 pound blocks. This unique cheese is aged over 6 months to perfection.
To make our specialty cheeses, we use high quality milk produced on small family farms. The farmers use time honored methods, such as grazing in season, hand milking, and cooling in bulk tanks, with no added rBST. The fresh milk is tested before it is unloaded at the plant, and then it is pasteurized. We make small batches of cheese using the old style, labor intensive process which yields a better tasting cheese every time.
A delicious smooth soft cheese with warm aromic flavors. Made into a wheel, hand salted and aged uncovered to form a natural rind. The Prairie Rose is aged at least 4 months.
