Thanks to a global marketplace, Utahns can enjoy many cheeses from around the world. This week we explore: Prairie Breeze™.
What is it? » This is no ordinary cheese. How many cheeses do you know of that are still made the old-fashioned way? By old-fashioned, I mean Holstein and Jersey cows that are hand-milked by Mennonite Amish in Iowa. The yellow cheese is aged for six months in vacuum-sealed plastic. The texture is creamy like a cheddar with little nibs of crystals scattered throughout. The taste is at once sweet and nutty.
Heirloom Tomato Panzanella with Bacon
Tomatoes, like cheese, can be magnificent. Especially when you find a local, vine ripened heirloom variety. Thanks to Nik Conner for sharing this recipe at New Pioneer Coop's website. Please visit the site for great food and recipes.
6 to 8 servings
Yeah it’s not a low-calorie dinner salad, but when tomatoes are at their peak, you’ve gotta try it at least once!

It’s often said that a dish is only as good as its ingredients, and that’s never more true than when you’re making something simple like mac and cheese.
Our newest cheddar, Prairie Breeze™, is loaded with flavor, hitting just the right balance of sweet & sharp. It also melts like a dream, which makes it a great choice for cooking. This recipe makes enough to serve a crowd and calls for a hefty helping of cheese – we wouldn’t have it any other way.
